Abstrak
In an effort to further stimulate the pace of tourism development in Indonesia, especially Bali, the government has issued various policies, including inviting foreign investors to invest their capital in Indonesia and establishing business facilities and infrastructure. The development of tourist attractions and other facilities that can provide convenience and comfort for tourists who come to stay and enjoy natural and culinary panoramas in tourist destinations.
One of the tourist destinations in Bali which has become a tourist village such as Sangeh village, wants to improve facilities and infrastructure for the convenience of tourists visiting the area. The restaurant is an example of supporting tourism that establishes facilities for the needs of tourists who come. Various kinds of Balinese food are very popular both from domestic tourists and foreign tourists. There are several Balinese specialties that are very popular with tourists, one of which is made from processed chicken such as betutu chicken.
Therefore, this type of food can be said to be special because in addition to its delicious taste, this food is also rarely made unless there is a big event or during certain holidays. One of the processed chicken foods that is very popular with Balinese people is betutu chicken, typical of Sangeh village, because in addition to its delicious taste, this food also serves various ways of serving and various side dishes that are very varied and in accordance with the main food which is adapted according to the needs of customers (tourists).
Of the many types of Balinese food that can be offered to tourists, be it those from the Denpasar municipality or those from various regencies in Bali. Each of these areas has its own taste, method of presentation and has its own characteristics that can attract tourists to enjoy a variety of Balinese specialties. I hope this monograph can be useful for academics, the food industry and the public as an additional reference in the field of culinary arts.
