Abstrak

Twenty-one strains ofAmylomyces rouxiiisolatedfrom starters of Asian fermented foods were dividedinto two groups, lactic acid (LA) and fumaric and malicacid (FMA) producers, by organic acid productivity inliquid culture. Phylogenetic analysis based on theldhBgene, ribosomal RNA encoding DNA (rDNA) internaltranscribed spacer (ITS) sequence, and genome-wideamplified fragment length polymorphism (AFLP) re-vealed thatA. rouxiiwas grouped into two majorclusters as to organic acid accumulation, correspondingtoRhizopus oryzaeandRhizopus delemar.
