Abstrak
Several Balinese manuscripts contain informations on the Balinese
culinaries. These manuscripts are: Tutur Dharmacaruban, Kakawin Brata Tatwa,
Kakawin Ramayana, Kakawin Siwa Ratri Kalpa, Kakawin Dharma Sawita, and
Purincinig Ebatan.
Types and forms of Balinese culinaries and their ingrediants were
mentioned in these manuscripts. It is believed that the types and forms of
Balinese culinaries are associated with
social ranks or stratifications of the Balinese society. The higher of
the social rank of a person in the Balinese society is the more he/she gained types and forms of culinaries
in an invited ritual or feast.
Baline culinaries, particularly the types and forms of satays are associated with the ninth
goods of cardinal pints. Types and forms of Balinese culinaries are also associated with the under world or
negative spirit (bhuta), on the other
hand there are also culinaries that are dedicated to the upper world or
positive spirit namely the God himself.
