I Nengah Kencana Putra is a Professor of Food Technology and Nutrition at the Study Program of Food Science and Technology, Faculty of Agricultural Technology, Udayana University.  He received a master’s degree in food science from IPB, Bogor, Indonesia; and a doctor’s degree in agricultural product technology at Brawijaya University, Malang, Indonesia.  Currently he is the head of the Food Analysis Laboratory at the Agricultural Technology Faculty of Udayana University. He is interested in starch technology, food bioactive components, and food safety.
