Abstrak
This research aims to increase the added value of traditional LedokĀ into the archipelago food. Ledok is a typical food from the island of Nusa Penida whose raw materials are cassava, corn and beans. All ingredients are mixed and boiled with even seasonings so that it has a distinctive aroma and taste. In this study, raw materials were made in an instant form and seasonings were made in the form of dry powder so that it was more durable and easily distributed. Ledok was packaged in a paper standing pouch and hasda shelf life of 6 months.
