Abstrak
The substance of this book comes from the
results of research on Purple Sweet Potatoes for approximately 15 years.
Compiled based on the findings of the effect of purple sweet potato tuber
extract, especially on the endothelium of blood vessels. The contents of this
book are also equipped with journal digests about purple sweet potato or other
herbs. The purpose of publishing this book is to make it easier for students to
understand the efficacy of herbal medicines, especially purple sweet potatoes
so that they are able to apply or explain to the public about the good use of
herbal medicines, especially purple sweet potatoes. Thus, this book is not only
important for students of the Faculty of Medicine but also important for the
general public in order to increase their knowledge of how important it is to
prevent disease with foods that contain certain active substances that are
beneficial to health. Based on the results of the study, it is known that
purple sweet potato tubers contain anthocyanins which can bind to various
proteins in cells, causing beneficial biological effects, one of which is the
antioxidant effect, so that it can protect the endothelial function of blood vessels
by neutralizing the effects of free radicals, thereby preventing various
cardiovascular diseases, for example. hypertension and atherosclerosis
