Characterization of Virgin Coconut Oil Enzymatic and Fragrant Lemongrass (Cymbopogon nardus) As Natural Antioxidants

Abstrak
Lemongrass (Cymbopogon nardus L.) contains essential oils or as an essential oil such as citrate, eugenol, limonone so that it has the potential as an antioxidant. Lemongrass can be used as a cancer drug ingredients that kill or kill cancer-causing cells without damaging other body cells. In addition to health or medicine, lemongrass oil is used in food and cosmetics products such as aromatherapy and in floor fragrances. The purpose of this second phase of research is to characterize Virgin Coconut Oil (VCO) after the addition of citronella fragrances which are continued enzymatically or fermentation using fermipan and enfluration using butter. The method of making VCO is optimized to obtain the highest lauric acid and meets the Indonesian National Standard. The method of analysis carried out conventionally and modern (Proximate analysis, FTIR, and GCMS).
