BASIC KINDS OF BUMBU

Broadly speaking, the spices in cooking can be classified into three basic spices, namely red base seasoning, white base seasoning and yellow base seasoning. From this basic spice, it can be developed into various types of dishes.

1) Red Seasoning

The basic red spice is one of the basic ingredients of Indonesian cuisine which is red in color with a basic composition of shallots, garlic, red chilies and salt. The dishes produced with red basic spices have a spicy taste and are fresh red in color. Used in cooking, for seasoning fried chili sauce, rendang, dry, pepes, plow sauce, various curries, rujak spices, and balado. The following is the composition of the ingredients for the basic red bumbbu:


Basic ingredients / composition:

• 9 cloves of red onion

• 5 cloves of garlic

• 10 pieces of red chili

• 1 tsp salt

Additional Material:

• 5 items of Candlenut

• 1 tsp pepper grains

• 1 tsp coriander

• 1 tsp shrimp paste

• 1 tsp sugar

• 4 tbsp cooking oil

How to make:

All spices are mashed until smooth, then sauteed until fragrant and cooked.


2) White Seasoning

The basic white spice is one of the basic ingredients of white Indonesian cuisine with a basic composition of onion, garlic and salt. The dishes that are produced with white base seasonings have a savory taste and cloudy white color. White base seasoning can be used in dishes of ase tongue, warm, scorching meat, vegetable bobor, and chicken opor.

Basic ingredients / composition:

• 11 cloves of red onion

• 6 cloves of garlic

• 1 tsp salt

Additional Material:

• 7 items of pecan

• 1 tsp pepper grains

• Coriander ½ tsp

• 1 tsp shrimp paste

• 1 tsp sugar

• 3 tbsp cooking oil

How to make:

3) Yellow seasoning

The yellow base seasoning is one of the basic ingredients of yellow Indonesian cuisine with a basic composition of onion, garlic, turmeric and salt. The dishes that are produced with white base seasonings have a savory taste and are bright yellow. Yellow basic seasoning can be developed into curry seasoning, yellow pickles, fish pesmol, yellow rice, various pepes, fried chicken etc.

Basic ingredients / composition:

• 10 cloves of red onion

• 6 cloves of garlic

• Turmeric 2 cm

• 1 tsp salt

Additional Material:

• 7 items of pecan

• 1 tsp pepper grains

• Coriander ½ tsp

• 1 tsp shrimp paste

• 1 tsp sugar

• 3 tbsp cooking oil

How to make:

Blend all the spices and saute until fragrant. Keep the bottle tightly closed and put in the refrigerator.
