Abstrak

This study was design to examine microbiological change of loloh bluntas during storage at room temperature for 24 hours. Three samples of loloh bluntas were collected from Denpasar and Badung and analyzed for total plate count, total yeast and mold, pH and total soluble solid every 6 hours. During storage, the level of total plate count, total mold/yeast of loloh bluntas changed significantly. The total plate count increase of 4.77 log CFU/mL (0 hours) to 6.44 log CFU/mL (24 hours). The total mold/yeast increase of 3.15 log CFU/mL (0 hours) to 4.26 log CFU/mL (24 hours). Loloh bluntas can be stored up to 24 hours at room temperature, over 24 hours loloh bluntas can not be stored because it already had total colony counts were higher than the standard limit (106 CFU/mL).
