Pemodelan konsentrasi gas pada pengemasan tertutup jamur tiram (Pleurotus ostreatus ) segar

Abstrak
The aim of this research was to obtain the mathematical model of head space’s concentration of oxygen and carbon dioxide of fresh oyster mushrooms on three storage temperatures that was 5oC, 15oC and room temperature. The gases’ concentration profile was obtained through simulating the storage model which is built by combining the respiration and diffusion through permeable medium model. Michaelis-menten model was applied to build respiration model and Fick’s Law to construct diffusion model. Data analysis resulted that Michaelis-Menten model was better to model the respiration rate of Oyster Mushrooms than initial model had proposed that was Michaelis-Menten Uncompetitive. Simulation also indicated that combination model of Michaelis-Menten and Fick’s Law able to predict the head space’s gas concentration of Osyter Mushroom Keywords: Michaelis-Menten model, respiration model, Fick’s Law, Oyster mushroom
