Abstrak

The objective of this research was to investigate the resistance properties of 20 isolates of Lactobacillus sp., previously isolated from sumbawa mare milk, at low pH level and high concentration of NaDC. The ability of these isolates to convert CA to DCA was also investigated before being developed into local potential probiotics. The results showed that 11 strains was found to be survive in the medium containing 0.6 mM NaDC at pH 2 or 3. All strains were to be resistant to pH 4 in the medium containing 0.2 mM NaDC. In the biotransformation test (conducted to 5 most potential isolates), it was found that none of those isolates converted CA into DCA, indicating that they are potential to be developed as probiotics.
