The Content of Lead Heavy Metal (Pb) in Shellfish at Serangan Coastal Area Bali

Abstrak

Kerang merupakan salah satu sumberdaya laut di Pulau Serangan yang telah lama dimanfaatkan oleh masyarakat sebagai sumber bahan pangan bergizi dan bernilai ekonomis. Penelitian ini bertujuan untuk menganalisis kandungan logam berat timbal (Pb) pada kerang yang dimanfaatkan oleh masyarakat di kawasan perairan Serangan. Sampel kerang diperoleh dari hasil tangkapan masyarakat di tiga lokasi dan tempat pengumpul kerang. Metode yang digunakan adalah preparasi pengabuan basah dan dianalisis dengan alat ICPE (Inductedvely coupled plasma emission). Hasil penelitian menunjukkan kandungan logam berat timbal (Pb) pada kerang bernilai ekonomi (Marcia opima, Marcia hiantina, Perna sp.) yang ditangkap oleh nelayan melebihi ambang batas BPOM (2,093 - 2,571 mg/kg). Namun proses pendedahan dengan perendaman 24 jam menurunkan kandungan timbal (Pb) di bawah ambang batas (0,387 - 0,971 mg/kg). Kata kunci: kerang, pangan, logam berat, timbal, Bali ABSTRACT Shellfish is one of important marine resources at Serangan waters Bali and has been exploited since long time ago by local communities as a source of nutritious food and income. The objective of this study was to observe the content of lead heavy metal (Pb) in shellfish cought by local people at Serangan water. The sample was most valuable shellfish cought local people and from shellfish broker (Marcia opima, Marcia hiantina, Perna sp.). Sample (shellfish flesh) was proximate and analysed by means of Inductively Coupled Plasma Emission (ICPE). The results showed that the content of lead heavy metal (Pb) in the sample of shellfish flesh cought by local people was above the standard allowed for food (2,093 up to 2,571 mg/kg). Overnight soaking, however, can reduce the level of lead heavy metal (Pb) in shellfish flesh (0,387 up to 0,971 mg/kg). Keywords: shellfish, food, heavy metal, lead, Bali
