Abstrak
Nutraceutical is something that can be in the form of food or part of the food itself that can provide medical or health benefits, including the prevention and treatment of a disease. The health benefits of nutraceutical are caused by the presence of bioactive compounds/agents present in the food known as "Nutraceutical Substance." Nutraceutical substances have physiological benefits to reduce the risk of chronic diseases outside their function as basic nutrients. Nutraceutical substances are grouped into seven groups: isoprenoid derivatives, phenolic compound, fatty acids, structural lipids, carbohydrates, and their derivatives, compound based on amino acids, microbes (probiotics), and minerals. Knowing and understanding nutraceutical substances' properties is fundamental to being able to research in the field of nutraceutical and developing nutraceutical products. This book discusses the chemical properties of nutraceutical substances, their presence in food, and their health benefits. Also discussed are the sources of nutraceutical substances, which include super food and functional food.
